Savory Lemon Oatmeal

⅓-½ cup steel cut oats (oats I used: https://amzn.to/2ChZ3Nm)
1 cup water
¼ tsp salt
½ tsp dry thyme
1 lemon, zest only
2 tsp extra virgin olive oil (I like this brand: https://amzn.to/2Uz7Txp)
2 tbsp chopped fresh herbs such as parsley or arugula

Cook oats in water, salt, and thyme according to package directions. Once most of the water is absorbed, remove from heat and stir in the lemon zest, olive oil, and herbs. Transfer to a bowl and enjoy.

Simple Yogurt Bowl

1 cup unsweetened full fat yogurt (I used non-dairy yogurt by the brand Lavva)
2 tsp dark molasses (honey or maple syrup are delicious as well)
¼ cup chopped nuts or seeds

Stir together yogurt, molasses, and nuts together in a bowl and enjoy. I like to have a serving of fruit on the side.

Tahini Toast

1 slice good quality bread (I used Ezekiel sprouted bread)

1 tsp molasses (or honey, maple syrup)
Optional toppings: nuts, seeds, berries

Toast bread then spread on tahini. Drizzle on molasses and add optional toppings. Enjoy.

Herbed Avocado Toast

1 slice good quality bread (I used Ezekiel sprouted bread)
½ avocado, mashed
2 tbsp unsweetened plain yogurt (I used non-dairy yogurt by the brand Lavva)
½ tsp herbed garlic salt (https://amzn.to/2EYzFgg)
1 tsp extra virgin olive oil
1 lemon wedge, juiced

Toast bread then spread on mashed avocado. Top with the yogurt, salt, olive oil, and lemon juice. Enjoy.
